Keto Blueberry Protein Muffins

As I continue to find more protein packed recipes (mainly muffins) to incorporate into my breakfast I've stumbled upon quite a few blueberry muffin recipes but with hardly any protein so I decided to make my own. These blueberry muffins are a delicious and fun way to incorporate protein into any meal or snack!

My go to flour to use in all my baking is almond flour and I find it pairs perfectly with my favourite vanilla whey protein powder especially in this recipe.

These muffins have the perfect sweetness level due to the vanilla flavour from the protein powder, the blueberries, and my favourite sweetener blend; stevia and monk fruit.

KETO PROTEIN BLUEBERRY MUFFIN
R E C I P E
INGREDIENTS:
2 cups blanched almond flour
1/2 cup vanilla protein powder
1/4 cup monk fruit sweetener
2 tbsp coconut sugar
1/4 cup granulated stevia
1 1/2 tsp baking powder
1/4 salt
1/3 cup coconut oil melted (can also use butter)
1/3 unsweetened cashew milk (or milk beverage of choice)
3 eggs
3/4 cup blueberries
INSTRUCTIONS:
Preheat the oven to 350 degrees F and line a muffin pan with 12 cupcake liners of your choice.
In a large bowl stir together dry ingredients; almond flour, protein powder, stevia, monk fruit, coconut sugar, baking powder, and salt.
In a second bowl whisk together the coconut oil, cashew milk, eggs, and vanilla.
Combine the two bowls and fold in the blueberries.
Distribute the batter evenly into the muffin pan and bake for 20-25 minutes, or until the top is golden and an inserted toothpick comes out clean.
